Our Story

Patrick and Erica Esteve graduated from the Culinary Institute of America. They gained experience in Michelin kitchens from New York City to Los Angeles. Together, as husband and wife, they chose to start a new business venture to change the stigma of “gluten-free.”

They have chosen to focus on creating gluten-free food that everyone can enjoy. Cooking gluten-free food has always been a staple in their family due to a family member with Celiac disease. Celiac disease is an auto-immune disease in which the small intestine is hypersensitive to gluten, leading to difficulty in digesting food. Celiac is a genetic disease where the only treatment is a diet free of gluten.

After consistently being disappointed with the available gluten-free options in local stores, they decided to create their own. Say Vrai™ was originally called “Impasta gluten-free”. The intention with Impasta was to manufacture gluten-free fresh pasta to restaurants, thus hopefully creating a more delectable option for celiacs. This venture began in March 2020 when Covid hit, forcing a change in the business plan. They used their culinary skills to revamp and retail gluten-free products which have kept them busy ever since. They created a variety of products so delicious that many asked, “Is this really Gluten-Free?” The chefs soon realized they were more than just “Impasta, the gluten-free pasta”, hence Say Vrai™ , “it’s truly gluten-free”, was launched.

The name is a combination of English and French.

C’est vrai - it’s true. (in French) pronounced like “say” “vr - ay”.

Say Vrai™ makes food that cooks, looks, and feels the same as regular glutenous fresh food. We pride ourselves on our gluten-free pasta having an “al dente” mouth feel and our baked goods having a proper glutenous texture.

As the number of celiacs rises every year, more people are choosing a gluten-free lifestyle as a healthier diet. Say Vrai™ provides celiac-safe options to consumers so everyone can enjoy Say Vrai™’s products at home without the risk of cross contamination. Our food is produced in a dedicated gluten-free and nut free facility.
